Frédéric Dufort
Executive Chef and the mind behind the culinary identity since 2013, Frédéric Dufort crafts a modern French brasserie cuisine that is generous, approachable, and rooted in seasonality, inspired by timeless classics. His career has led him through renowned kitchens in Québec and abroad, notably at the Michelin‑starred restaurant Benu in San Francisco, where he refined his technical and creative approach. Today, he oversees all of our kitchens, curating menus designed for sharing, consistency, and the simple pleasure of dining together.
